Resumo: | This study aimed to evaluate the composition and processing of milk from F1 (Holstein x Zebu) cows fed diets with different sources of nitrogen compounds. We used eight cows with approximately 80 days of lactation in the beginning of the experiment with an average production of 20 kg of milk adjusted to 3.5% fat / day, in two 4 x 4 Latin square (4 animals, 4 diets, 4 periods). The experiment lasted 72 days, divided into four periods of 18 days, being fourteen days for adaptation and four days for collections per experimental period. A complete ration was supplied twice a day, at 8 h and 16 and adjusted every day, so that the remains represent 10% of the total supplied. Milk samples were collected from every animal in the morning and in the afternoon, mixed and analyzed as for fat, protein, lactose, freezing point, density, pH, acidity, total and defatted dry extract, total solids and fatty acid profile. On the first day of collection, the milk produced from every treatment was cooled to produce “Minas Frescal” cheese that after processing, they were weighed to determine the yield, the physical-chemical characteristics (fat, protein, acidity, pH, texture and Aw) fatty acids profile, and subjected to microbiological analysis and sensory analysis test. Contents of fat, protein, lactose, freezing point, density, pH, acidity, total and defatted dry extract and total solids did not differ between sources of nitrogen compounds (P> 0.05). The daily production of milk protein (g / day) was influenced by nitrogen sources with higher values for diets with soybean and sunflower. The milk urea nitrogen was higher in the diet with urea. The fatty acid profile of milk indicated a significant effect for C4: 0 acid with higher values for diets containing urea, soybean and castor bean meal; C18: 0 acid in the milk of animals fed diets with soybean meal, urea and sunflower meal; C10: 1 and C12: 1 ones showed higher concentrations for diets with soybean meal and sunflower, and the C18: 1 T10 T11 T12 with higher values for diets with soybean and detoxificated castor bean meal. As for nutritional quality index of the lipid fraction of milk, only for the 6 / 3 relationship the values were higher for the diet with detoxificated castor bean meal. Contents of fat, protein, fixed mineral residue, total solids, moisture, lactic acid, pH, texture and Aw did not differ in Minas Frescal cheese between the different sources of nitrogen compounds of the experimental diets (P> 0.05). As for fatty acid profile of Minas Frescal cheese, the undecanoic acid (C11: 0) was higher in diets with soybean meal and sunflower meal; the C18: 2-C9-T11 (CLA) was superior to diets with urea, soybean meal and sunflower meal; and ecosatrienoic acid (C20: 3) was higher for diets with soybean meal and urea. The different sources of nitrogen compounds in the diet of F1 Holstein x Zebu cows with production of 20 kg of milk corrected to 3.5% fat does not affect the physical-chemical composition of milk and cheese, as well as the yield and acceptance of Minas Frescal cheese. However, the diets with different sources of nitrogen compounds influence the concentration of some fatty acids of milk fats and of the Minas Frescal cheese, besides the highest level of urea nitrogen in the milk of cows fed urea. |
